Amla 1 kg, small cardamom seeds 10 grams, water 25 grams, sugar 1 kg, lime 25 gramsThe gooseberries you choose for making murabba should be spotless and green. In the initial process of making murabba, first add lime to water and then put all the gooseberries in the lime water.Leave the Amlas in lime water for at least 24 hours. Then take them out and wash them thoroughly in clean water for at least 5 to 10 minutes and wipe them thoroughly with a clean cotton cloth.In the next step, first put water in a steel vessel and put it on fire. When the water becomes very hot, put the Indian gooseberries in it. When 4 or 5 boils come out, take them out of the water and wipe them with a cloth and mash them well with a fork or a fine knife.After that, prepare one string sugar syrup in a vessel. When the syrup is ready, put the gooseberries in it and let it cook on fire. When the gooseberries are cooked well in the syrup, take them off the fire and let them cool down. After they cool down completely, fill them in a clean, dry and odorless box. After that, grind the small cardamom seeds finely and sprinkle them over the gooseberries in the box. Gooseberry murabba is now ready, you can start eating it right away.
Second method of making gooseberry jam
Amla 2 kg, lime 50 to 60 grams, sugar 2 kg, water as per requirement.First wash the amlas thoroughly in water and then soak them in lime water for a whole day. Now remove the amlas from lime water and wash them with clean water. Boil the water in a vessel and put them in it. After 20 minutes, open them and take them out of the hot water. Spread them in a big plate and put 1 kg of sugar on top. Leave them like this for a day.The next day you will see that the Indian gooseberries have released their water and the sugar has also dissolved to some extent. Now remove the Indian gooseberries from the sugar solution and add the remaining 1 kg of sugar to the first dissolved sugar.After this, prepare a solution by mixing water in sugar. Once the solution is ready, add amla to it and then put it on fire. As the syrup thickens, the amla will also melt. After half an hour, take it off the fire and let it cool. Then store it in a vessel or glass container. Now, the delicious amla murabba is ready.
